The London Gastronomy Seminars launch this month with a series of lectures exploring the technical side of food and cooking. The conveners are James Hoffman of Square Mile Coffee, Bronwen Percival, cheese buyer at Neal’s Yard Dairy, food and wine writer Francis Percival, and molecular gastronomist Dr. Rachel Edwards-Stuart.
The first public lecture, on “Flavour Extraction”, will take place at 6.30pm, Monday 30th November at Senate House, University of London. Speakers will include Hervé This, a physical chemist, widely regarded as the father of molecular gastronomy, and Tony Conigliaro of 69, Colebrooke Row in Islington. John Forbes, a director of research and development at R Treatt - a company that produces essential oils for use in the food industry - will also be speaking.
