One of the Spectator Wine Club’s wine partners, The Colchester Wine Company, has an interesting promotion going at the moment which gives you the opportunity to explore in a practical way some of the science behind wine.
By practical I mean drinking, so it is far from being a dry exercise.
They have teamed up with the boffins at New Scientist magazine and come up with 6 wines that each emphasise a different scientific wine topic.
The wines and themes are as follows:-

Theme: cold controlled fermentation

Theme: Umami
2001 Rioja Reserva, Bodegas Murua, Rioja
Theme: evolution and oak ageing
2007 Nero d'Avola, MandraRossa, Sicilia
Theme: physiological ripeness
2005 Laudun, Château Courac, Southern Rhone
